VERY IMPORTANT PLEASE READ AUDREY'S ORGANIC PRODUCE!!!!!!
Hello,
I have some very important news for you, my
customers.
I am sorry to burst this upon you with very short
notice but it is with a heavy heart that I have come to the decision to close
Audrey's Organic Produce. I have tried very hard to make this business a
thriving one over the past five years and I have now taken stock and realized
that it just is not working. I appreciate each and every one of you and am glad
to have had the opportunity to have gotten to know you. This notice takes effect
immediately and i will be asking you to please put out your empty bins for me to
collect on JAN 13TH ON QUADRA AND JAN 14TH IN CAMPBELL RIVER. At this time i
will also collect any debits and leave you any credits you may
have.

audrey's organic produce for delivery dec 23/24
hey everyone, the site has been updated for this weeks' delivery
--deliveries will happen as usual throughout the holiday season this year. 23/24 and 30/31 are the holiday deliveries.

this will be the last week for pasta until jan 6/7 delivery. it is easy to stock up and throw some in the freezer. just boil frozen noodles to cook.

kale, corn, and beet salad recipe
hey everyone, this salad is a favorite in our house, lots of flavour and it gets those greens into my kids. this recipe is from the Wild Rose Detox cookbook.
KALE, CORN, AND BEET SALAD
serves four
note--You can boil, steam, or bake the beets the day before or prepare them on the spot. To bake beets, put beets in a single layer in an oiled shallow baking dish. Add 1/4 inch water and cover the dish To easily peel the beets, press their skins with your thumb, under water, once they are cool enough to handle.
4 cups chopped kale
2 medium beets, cooked
1 cup corn fresh (then cooked), canned, or frozen
1tsp. tarragon (optional)
1/4 tsp salt
pinch pepper
1/4 cup Basic Oil and Lemon Dressing
-steam kale 3-5 mins
-peel quarter and slice beets
-combine all ingredients in a bowl and toss
enjoy! yum
Basic Oil and Lemon Dressing
Yields one cup
2/3 cup flaxseed oil or extra-virgin olive oil or mixture of both
5 TB freshly squeezed lemon juice (if using prepared lemon juice Santa Cruz Organic is recommended)
1 clove garlic, finely minced
1/4 tsp salt
pinch pepper
- Mix all ingredients in a jar and shake vigourously for 1 minute.
- If possible, let sit for one hour or longer to allow the flavours to blend together.

basil pesto recipe

Fresh Basil Pesto Recipe
Ingredients
- 2 cups fresh basil leaves, packed (4oz should be enough)
- 1/2 cup freshly grated Parmesan-Reggiano or Romano cheese
- 1/2 cup extra virgin olive oil
- 1/3 cup pine nuts or walnuts
- 3 medium sized garlic cloves, minced
- Salt and freshly ground black pepper to taste
Method
1 Combine the basil in with the pine nuts, pulse a few times in a food
processor. (If you are using walnuts instead of pine nuts and they are not
already chopped, pulse them a few times first, before adding the basil.) Add the
garlic, pulse a few times more.
2 Slowly add the olive oil in a constant stream while the food
processor is on. Stop to scrape down the sides of the food processor with a
rubber spatula. Add the grated cheese and pulse again until blended. Add a pinch
of salt and freshly ground black pepper to taste.
Makes 1 cup.
Serve with pasta, or over baked potatoes, or spread over toasted baguette
slices.
